Mezze Maniche Rigate with Olive and Tomato Sauce

Ingredients for Mezze Maniche Rigate with Olive and Tomato Sauce

Serves 2 

1 Can Chopped tomatoes 

1 tablespoon chopped red onion  

Olive oil 

Sea salt and Pepper 

250g Pasta 

100g olives 

Oregano

Basil

Parmesan to serve 

Method

Bring a large pan of salted water to the boil and cook the pasta according to the pack instructions until al dente.

Drizzle some olive oil into a pan and add your red onions and garlic. Saute for a minute, then add in your chopped tomatoes. Stir and add your chopped olives

Add in 1/2 teaspoon of oregano or basil

Drain the pasta and add the tomato & olive sauce and toss everything together. Season and serve with the extra basil scattered over and some freshly grated pecorino or parmesan

Add a glass of vinca wine and enjoy!
