How to make Christmas Turkey
Utensils & Essentials
Oil-rapeseed/sunflower/vegetable, Pepper, Foil to cover turkey and to line the baking trays, Small bowls for mixing, Food processor, Loaf tin for stuffing, Roasting tin and Baking tray.
Ingredients:
- 1.2 - 1.5kg Turkey breast joint
- 500ml Turkey gravy
- Proscuitto/ parma ham (1 Pack)
- 12 Pigs in blankets
- Sprigs of thyme (Approx. 10)
- 150g Sage and onion stuffing pack
- Tracklements Cranberry Sauce jar
How to prepare
Christmas Turkey
(Cooking times for turkeys vary according to their weight, but as a general guide, it's a good idea to allow for 70 minutes as a base cooking time for a joint under 4kg, then an extra 20 mins per kilo. Cooking temperature is 190C. Our recommendation is 102 minutes based on a 1.6kg weight. If you've frozen your turkey, it needs to defrost before cooking. Defrost in a fridge for 24 hours before cooking, ensuring it's fully defrosted.)
Before beginning to cook, remove the turkey from the fridge, take it out of the packaging and leave it for an hour to reach room temperature.
Preheat oven to 190C. While you wait for the oven to heat, weigh the turkey joint to calculate the cooking time (as above), then take your parma ham and wrap these around the turkey joint, place some sprigs of thyme on top of the turkey and place this in a roasting tin.
Cover the joint with foil and put it in the centre of the hot oven, cooking for the required time or until the juices run clear and there is no pink meat.
While your turkey is cooking, take your pigs in blankets and put these on the wooden skewers provided. Put 4 pigs in blankets on each skewer.
Place the pigs in blankets skewers on a baking tray. These need around 30 minutes to cook in total. (Put these in the oven around 15 minutes before you need to turkey out of the oven.)
At the halfway point after 15 minutes, turn the pigs in blankets over. Any of the juices in that are in the tray, you can take a metal spoon and baste the pigs in blankets to stay plump and juicy.
Once the turkey is cooked remove from the oven and cover loosely with foil. Allow to rest at room temperature for 15 minutes. It's important to leave the meat to rest, to allow the juices to permeate, keeping the meat succulent.
After the turkey has rested, you can now take the pigs in blankets out of the oven for serving.
You can now serve and enjoy your Christmas turkey and pigs in blankets, adding cranberry sauce as you so wish!
