Classic Peking duck, served with handmade pancakes, spring onions and hoisin sauce

Served as a main course following on from our authentic Dim Sum selection, these pancakes are sure to be a firm favourite on any Chinese meal.

Despite its high fat content, duck meat is packed with nutrients and has a lot of protein and minerals. Quack for quack, it's delicious. You can dial this down by removing the skin, but the bottom layer of fat should be eliminated as well.

Cooking Instructions

Put the duck in a roasting tin belly-side up in the oven for at least 12 hours after defrosting it. Set the oven to 175 degrees. Place the duck in the oven, belly-side up, so the duck oil will collect while it cooks. Check the duck to see if it is done after 45 minutes. Check the meat regularly if it is still pink when you cut off a small piece. If so, make sure it does not burn. When done cooking, let the duck cool for 10 minutes before serving. After the duck has cooled, prepare the cucumber and spring onions by slicing them thinly, and steam the pancakes for 10 minutes. Serve with Hoisin sauce.
