This tarkari recipe is from Western Venezuela and is traditionally made with goat, but it also works very well with lamb. One of the main ingredients is yellow curry paste, which we adopted from the neighbouring islands of Trinidad and Tobago. They used to be an English commercial port, with a strong relationship with India, and that’s how the people of the island started using yellow curry paste, an essential ingredient for this wonderful dish.
