In this class, pasta expert Raffaella Bucefalo will teach you how to make farfalle, one of Italy’s oldest pasta shapes, which dates back as far as the 16th century. Originating from the Emilia-Romagna and Lombardy regions of Italy, farfalle are said to have been created by housewives looking for a way to use up dough leftover from making ravioli. The curled shape of the farfalle ensures that the pasta captures whatever sauce it is paired with, in this case a rocket pesto made with garlic, walnuts, parmesan and olive oil.
