
Costa Rican Tarrazú La Trinidad | 250g | Wogan Coffee
As part of the Tarrazú region's "micro-zones", which include La Trinidad, the Tarrazú Co-operative was formed to assist promote the distinctive coffee qualities of each area.
In Costa Rica and across the world, Tarrazú coffee is one of the most renowned and represents 40% of national input. With an elevation of 1,200-1,900 meters above sea level, this product is grown in the most optimal of climates and soils. The majority of the plantations are shaded by a variety of trees.
Typically, cherries are harvested early in the morning and brought to receiving stations by midday 4pm, with a cut-off time of 5pm. The coffee cherries are then set to the wet mill, where they are pulped, cleaned and dried throughout the course of the night. After nine hours, it will be ready to be put in a Guardiola for a more precise 11 percent moisture drying process. After drying, it's seperated by density and then store in parchment for 6-8weeks before shipping.
