At 35 years old, he has been perfecting his craft for 20 years, currently serving as the head chef for the FJB Hotel group in Poole, where he lives with his wife and two dogs. His culinary journey began at the age of 16 as a kitchen porter, leading him to study cookery at Eastbourne College before climbing the ranks in high-end hotel restaurants. Simon's cooking is deeply influenced by his Portuguese heritage, a legacy from his grandmother and father, both of whom played significant roles in his culinary development. His style is characterised by bold and daring flavours, with a refined presentation that incorporates Modern British techniques and Portuguese twists. Simon also draws inspiration from Japanese cuisine, reflecting his passion for Asian flavours and culture​​.
In addition to his professional endeavours, Simon Braz engages with the culinary community through his work with Chefs For Foodies. He has shared his love for Japanese cuisine through various platforms, emphasising the influence of his travels to Asia and his desire to share the Japanese cuisine he has come to adore. His commitment to culinary excellence is further demonstrated by his initiative to work in Michelin-star restaurants such as The Hand and Flowers in Marlow and Gidleigh Park in Devon during his holidays​​.
